Torta di Mele (Apple Tart)

A simple comfort dessert

There are so many recipes for “torta di mele” (apple tart) but this one is definitely my favorite. It is surprisingly light, low in fat and sugar, but it tastes wonderful and looks very rustic. The ingredients are very simple, other than 3 big apples, most likely you have all the ingredients in your cupboard. Plus, it takes only about 15 minutes to prepare, and 35 minutes or so in the oven. If you are looking for an easy but delicious rustic apple tart (and healthy version), this is the one for you!

The cake has more of a custard-like texture - it puffs up like a souffle in the oven. It is great after letting it cool, but it also tastes wonderful the day after, as the dough settles and become custard-like.

Torta di Mele

3 large golden delicious apples

Juice of 1/2 lemon

2 TBP butter

3 TBP cream or greek yogurt

2 extra large eggs, lightly beaten

3/4 cup flour, shifted

1/3 cup sugar

1 tsp baking powder

1 tsp baking soda

pinch of salt

Confectionary sugar for dust
